Blast Chillers

Blast chillers cool food rapidly to a low temperature that is relatively safe from bacterial growth. Blast freezers or shock freezers subject food to a very low temperature to freeze the water content in the food without forming large crystrals thus preserving the food texture. Both methods are widely used in catering, food production as well as in molecular gastronomy.
