Sous Vide
Sous vide equipment are also referred to as water ovens or water baths. There are 2 types: water baths with a circulator like Fusion Chef by Julabo or an all-in-one water bath like SousVide Supreme. Sous-vide cuisine is a french term meaning cooking under vacuum. This method of cooking is performed by submerging the vacuum packed food in a water bath and cooking slowly at consistent low temperatures. Sous vide cooking allows the food to maintain its textures, flavours and nutrients which conventional cooking could destry.
